My husband loves chicken noodle soup. He convinced me to try to make my own. It’s nothing fancy, but it’s super easy! I use my crock pot, but I suppose you could make it on a pot on the stove as well.
CHICKEN NOODLE SOUP
8 chicken breasts (mine are frozen)
2 quarts of chicken broth
1 onion
chopped carrots
1 clove garlic
Salt & Pepper to taste
6 ounces egg noodles (I use extra noodles because I like mine hearty)
Toss all the ingredients into the crock pot (I don’t care for celery, but you can certainly add it). Set it on high. Leave it be for about 6 hours. I pre-make the pasta and add it when I’m ready to serve, but you can also put the noodles in for about 30 minutes on high as well. When you are ready to eat, pull apart the chicken with a fork. Ladle it up and eat!
This recipe fills up a standard crock pot. It’s easy enough reduce it 1/2 if you don’t want that much.
It’s simple, but we like it. Warms the belly!
